How To: Nigerian White Rice And Beans

I know some people like me are not a fan of beans but I tell you'll fall in love with beans especially when it is served with White rice, Fried plantain and a sabrosolicious Ata dindin...I know, I know, don't salivate yet. 

You know sometimes instead of eating the rice and beans separately, you can cook it together, yeap, I said together, Not only does it save time, it also saves your cost of energy. And even though you are not a beans fan, you just can't resist Ata dindin

For this recipe, you'll just need:
  • 1 cup of Beans (preferably black eyed, but hey! it doesn't matter.)
  • 2 cups of Rice
  • 1 small onion (just for the feferity, its optional)
  • Salt to taste
Cooking Procedures                                                                                     

1. Pick and wash the beans gently to prevent the coat from coming off

2. Transfer the washed beans into the pot to be used, add a pinch of 
   salt, shredded onions and water at least 6 inches above the beans, set to 
   high heat for 45 mins (you know that beans takes literally the whole year to 
   cook...just kidding!)

3. While the beans is cooking, parboil the rice and get ready to make the
    Ata dindin

4. After 45 mins of cooking the beans, spread the parboiled rice over the beans,
    cover the pot and cook for another 30 mins on medium heat.

5. Get ingredients for ata dindin ready and/or plantain to be fried.

6. Check for salt taste in the rice and adjust.



Remove from heat and your rice and beans is ready to be served with ata dindin or Obe Ata and/or Fried plantain
