Jollof Rice| How To Make Jollof Rice

I know I've talked about how to make Jollof rice before but erhmm, that was just the economical point of view.

You know...like when you don't enough ingredient and/or condiments to make it fully rich.

Making Jollof rice has suddenly become

my best easy to cook food over the years,well..because it's my family every Sunday afternoon dish.

Jollof rice is not really complicated as you think,trust me,when you know this method,it will be easy.
All ingredients you'll be needing are:
  • Long grain rice-2 cups
  • Meat/Chicken
  • Onions-1 large and 1 small
  • Fresh tomato-5 large
  • 400g can tomatoes
  • 1 large red bell pepper
  • 1-2 red habanero pepper a.k.a ata rodo
  • 2 large shepherd Pepper
  • Thyme and curry
  • Maggi and salt to taste
  • Green beans (optional)
  • Dry grounded crayfish
  • a small bowl of shrimps (optional)
  • Groundnut oil

       Serving: 3-5 plates                   Cooking time- 45 mins

Lets get started:                                                                            
  1. Rinse and blend all the pepper listed above,4 fresh tomatoes, can tomatoes and the large onion. Slice the small onion,green beans and 5th tomato.
  2. While blending the tomato,wash the chicken/meat and shrimps.
  3. Bring the meat/chicken to a boil on medium heat, adding Maggi, curry, thyme, sliced onion and salt to taste with enough water.
  4. Pour the blended tomato into the pot you'll be cooking the rice in and boil it till it is thick.
  5. Wash the rice with hot water with a  turning stick or parboil it
  6. When the tomatoes is thick enough,add the stock from the seasoned meat/chicken and reduce heat
  7. Take little amount of the tomato sauce into a bowl, put the chicken into it and stir it in.
  8. Put the chicken into the oven at 350F (180ÂșC) for 20 mins-make sure to keep an eye on it. OR you can fry the meat.
  9. Add more Maggi, curry, thyme, and salt to taste (don't worry if it tastes over seasoned).
  10. Add the groundnut oil,stir and leave on low heat for 5 mins. Add the parboiled rice into the pot of tomato sauce (add little water if the tomato sauce won't be enough)
  11. Spread the shrimps over the rice and add the dry crayfish to taste. Leave on medium heat for 20-30 mins.
  12. Open the pot and add the sliced tomatoes,green beans and the remaining sliced onions. Leave on low heat for 10-15 mins.
  13. Remove the chicken from oven and set aside.
  14. When cracking sound is heard, turn off heat,stir the rice well,cover the pot and return to the heat surface.Do not turn on heat.
  15. Clean up cooking area and set up plates or serving bowl.


Dish your Jollof rice and chicken/meat. Best served hot and enjoy with any soft drink or juice.
