Obe ata |
Obe Ata is one of the popular and most cooked stews in Nigeria and mostly prepared during the weekends. It is usually eating with other food like:
- Boiled white rice
- Spaghetti
- Boiled and Fried yam
- Boiled and Fried plantain
- Ewedu,okro and so much more
Obe Ata a.k.a is always prepared with care as you don't want
it too be too spicy, salty or swimming in oil...lol
For making my stew, I mostly use
- Assorted meats
- 4 chicken thighs
- 4 chicken drumsticks
- 8 pieces of chopped cow meat
- 1 large fish cut into 4 pieces
- 8 pieces of ponmo
- random number of saki
- 5 pieces of fresh tomatoes
- 1 400g can tomato
- 1 large scotch bonnet pepper
- 1 large onion
- 2 red pepper
- 2 cayenne pepper
- 3 serving spoon of veg oil
- curry,thyme,maggi and salt to taste
Cooking Procedures
1. Wash the meats,season with maggi,salt,thyme and curry and bring it to boil
Note:- make sure to put the Ponmo at the bottom of the pot, as it takes time
to be tender.
Pour water into the pot, so that it will be half of space the meat occupied;this
is to produce enough stock
Wash and Salt the fish.
2. Wash and blend/grind all the pepper, onion,can tomato and fresh tomatoes
till is smooth
3. Boil the grounded tomatoes for 20 mins to allow excess water to evaporate
4.After checking the taste of the meat and tenderness, pour in the veg. oil, stir
and leave for another 10 mins on high heat; this is to fry the meat a little
5. Pour in the tomato sauce into the pot containing the meat, stir in carefully.
Cover the pot and leave to cook for 7 mins, check again for taste, adding very
little at a time to prevent a lopsided taste. Put in the salted fish ( more
reason you should be careful with the salt)
6. Leave the stew on medium heat to cook, after 7 mins, check the stew again,
gently stir round the side, to prevent fish breakage.
Turn off the heat and clean up cooking area, transfer pot to a cool surface
Your Obe Ata is ready to be served.
